Eggplant is a great vegetable as it has low carbohydrates but loads of fibre , vitamins and minerals. So it's a vegetable for keto diet and help in weight loss.

I prepared a simple dry curry of my garden eggplant with less masala and lots of onions. It tastes so good and goes well with steamed rice and roti.
