I prepared a simple dry curry of my garden eggplant with less masala and lots of onions. It tastes so good and goes well with steamed rice and roti.

Ingredients

4 servings
  1. 500 gmsmall eggplant/brinjal/bengan, chopped length wise
  2. 1large onion chopped lengthwise, finely
  3. 2green chill,slit length wise
  4. 1 tbspchopped garlic
  5. 2medium tomatoes chopped
  6. 2dry red chillers (not so hot)
  7. 1/3ponch phoran
  8. 1/4turmeric powder
  9. Salt as required
  10. 1/2 tsproasted cumin powder
  11. 1 tbspcooking oil

Steps

  1. 1

    Heat oil in a kadhai. Add dry chillies and ponch phoran. Allow phoran to splutter.

    Add chopped garlic and slit green chillier. Saute for 1 minute.

    Add chopped onion then. Mix salt and turmeric powder and saute till onions and transparent.

    Add chopped eggplant and tomatoes. Mix well. Cover and cook till brinjal get cooked on low heat.

    When it's done bring down from stove and mix well the roasted cumin powder. Serve as a main /side dish in lunch /dinner.
