Ingredients

  • 2 lblean ground beef
  • 1pablano pepper diced
  • 1med yellow onion diced
  • 2 (14.5 oz)cans diced fire roasted tomatoes
  • 1 (6 oz)can tomato paste
  • 2 tspneed better than bouillon
  • 1 (12 oz)bottle of dark beer or ipa
  • 1 1/2 tbspchili powder
  • 11/2 tbspsmoked paprika
  • 1 1/2 tsponion powder
  • 1 tspgarlic powder
  • 1 tspcumin
  • 1 1/2 tspsalt
  • 1 tspsalt
  • 4-6 clovesgarlic minced
  • 2 tbspoil
  • Garnishes
  • chopped cilantro
  • diced onion
  • shredded cabbage
  • lime wedges
  • sour cream
  • cheese

Steps

  1. 1

    Heat the 2 tbsp oil in a 4.5qt or larger Dutch Oven over med heat. Add onions and peppers and cook for about 2 minutes.

    Add ground beef and break up with a wooden spoon. cook until no longer pink. drain grease if you did not use a lean beef. add minced garlic and stir for 1 min more.

  3. 3

    Add all your spices and tomato paste. stir to incorporate and cook for about 2 minutes. add better than bouillon and stir until dissolved.

  4. 4

    Add bottle of beer and sommer for 2 minutes.

  5. 5

    Add both cans of diced tomatoes.

  6. 6

    Simmer covered for 1 hour on low heat.

  7. 7

    Serve and top with favorite garnishes.
