Ingredients

  1. 3 TablespoonsButter
  2. 400Preheat oven to
  3. 1 halfwhite onion chopped thinly
  4. 4 clovesgarlic chopped
  5. 1/2 cupflour
  6. 1 cupbroth
  7. 2 cupsmilk/half amd half mixture
  8. 1-2chile de arbol crushed
  9. 1 1/2 teaspoonskosher salt
  10. 1/2 teaspoonblack pepper
  11. 1 teaspoondried thyme
  12. 6-8potatoes peeled and sliced thinly
  13. 2 cupsgrated cheddar cheese
  14. 1/2 cupgrated parm or romano

Cooking Instructions

    Preheat oven to 375
    Melt butter and saute onions in a pan til translucent...5 min

  2. 2

    Add garlic for 1 min

  3. 3

    Add flour, stir and heat for 1 min

  4. 4

    Add broth stir and heat for about 2 min

  5. 5

    Add milk, stir and heat until edges start bubbling, but not to a boils. Turn off and set aside.

    Layer 11 x 17 pan...(or whatever you wish) with 1/2 of the potatoes. Pour 1/2 the mixture over potatoes, dress with 1 cup cheddar and all of parm. Layer the remaining potatoes. Top with sauce and remaining cheese. Cover with foil. Bake for 25 min. Uncover amd finish for 25 min.

    Let rest 10 min and serve.
