Òjòjò (fried water yam)

My family has a small farm on which we planted some water yams months ago. When we harvested them, I decided to do a short recipe series on water yam dishes. This is the first recipe. Enjoy! Your comments are highly welcomed.

Steps
- 1
Peel and cut the yam into small chunks.
- 2
Wash the chunks and grate into a bowl. Add the onion to the pepper in a small bowl.
- 3
Add the pepper and onion to the grated yam and mix steadily for about 2 minutes until it is well mixed.
- 4
Add the salt and mix.
- 5
Place your frying pan on medium heat. Pour some oil into the pan, about half-inch high. Leave it to heat for about 3 minutes.
- 6
Use your fingers to scoop small bits of the mix into the oil. Make it small so it will fry easily.
- 7
Fry until they are golden-brown on both sides. Remove from the oil and fry the rest of the mixture.
