Preheat the oven to 170 degrees on the grill setting.

Slice the bread in half.

Place shredded chicken in bowl. Add mayonnaise and season with salt and pepper and taste (add more mayo, salt or pepper as per preference).

On one slice of bread, add a generous amount of the chicken mayo filling. On the other slice add the sliced cheese.

Place the bread slices on a baking tray. Place tray in oven and grill sandwich until the cheese had melted and bread is lightly toasted.

Remove baking tray from oven and transfer bread slices onto a plate. Place the melted cheese on top of the mayo chicken. Serve and eat immediately while hot.
