Ingredients

45 minutes
4 servings
  1. 1 cupmaida
  2. 1.5 tbspoil or ghee
  3. As neededoil for frying
  4. 1/4th tsp baking powder
  5. 1 pinchsalt
  6. 1/4 cup sugar approximately
  7. 1/4 cup water for syrup
  8. As neededwater to make dough
  9. 1/4 tsp cardamom powder

Steps

45 minutes
  1. 1

    Mix maida with oil or ghee and sprinkle pinch of salt and baking powder.Mix well and add water gradually to make a tight dough.Knead well and set aside covered for half hour.Divide dough into 4 balls.

    Roll out each ball into a circular disc which will be not too thin or thick. Cut the disc into strips then again diagonally or diamond shapes with a knife or cutter.

    Heat oil in a pan and fry these diamond cuts or shakarpara in low flame till crispy golden brown. Make a sugar syrup of 2 to 3 thread sticky consistency. Add cardamom powder and set aside to partially cool down.Allow the shakkarpara to come to room temperature.

    Add all shakkarpara /gojas or diamond cuts to the syrup and toss quickly so that syrup coats all before crystalizing.Spread out to cool and store in airtight container. Keeps well for a month. Serve delicious crispy shakkarpara as a tea time snack to guests specially during Diwali,Dussehra or any festival.
