For my final recipe of this cookbook I wanted to share another favourite dessert of mine. This dessert is great to eat during the colder days. Not only is this such a quick and simple dessert to make but it also warms you up.

I love how the ginger and sweetness of the syrup brings warmth and slight spiciness. These flavour combinations merry well together and are not overpowering.

By smashing the ginger and cooking it in the water first, this helps to bring out the taste even more. The recipe can easily be adjusted, adding as much or as little of the sugar and ginger depending on preference. I sometimes also like to add goji berries.

I hope you enjoy making and eating it as much as my family and I do.

Ingredients

4 servings
  • Ginger syrup:
  • 4-5 cupswater
  • 4 slicesginger 1 cm thick, smashed
  • 30 gChinese rock sugar (use more or less depending on what preference)
  • 1 teaspoonclear runny honey (optional)
  • 1/4 cupgoji berries (optional)
  • Cooking glutinous rice balls:
  • 16glutinous rice balls
  • Water for cooking glutinous rice balls (enough water to cover)

Steps

  1. 1

    Cut the ginger slices and smash. In a saucepan on medium to high heat, add water and smashed ginger. Bring water to a boil to allow the ginger to infuse.

    Add rock sugar, honey (optional) and goji berries (optional). Use a wooden spoon to dissolve the sugar. Reduce heat to low and simmer for a few minutes (roughly 4-5 minutes).

    Stir to ensure the sugar has fully dissolved and give it a taste. Adjust taste to desired sweetness (add more rock sugar or honey if necessary).

    In a separate saucepan on medium to low heat, add water and bring to a boil. Then add glutinous rice balls. Once cooked the balls float to the top (roughly 3 minutes). Pour balls in a sieve and rinse under cold water. Transfer glutinous balls to the ginger syrup.

    Ladle the dessert into serving bowls. Serve and eat immediately while hot.
