Simple Whole Roast Chicken

Calculate the cooking time by adding 10 minutes and taking away 30 minutes from the time written on the packaging. For example, if it says 1hr 50mins, add 10 for 2 hours and take away half an hour. For the 1hr 30mins cook covered in tin foil at 200 in a conventional oven or 180 in a fan oven. The last half an hour cook without foil.

Preheat the oven. Remove the chicken from it's packaging and place in a large roasting tray. Dry the chicken with some kitchen roll. Wrap your hand in tin foil and take a scoop of butter and rub all over the chicken. Cover the chicken in a sheet of foil and place in the oven.

After the chicken has had its 1hr 30mins (example) remove from the oven, remove the foil and tilt the pan so that the fat and butter collects in the corner. Make sure to tip it so that the juice inside the chicken can also flow out. Using a spoon or turkey baster and baste the chicken. Then return to the oven for the last half hour.

Remove from the oven and place the chicken on a large plate and cover again with tin foil to keep in the heat and moisture. Carve and serve.
