Autumn brings color to the landscape and to the kitchen. Legume soups are always on my table, but I wanted that extra touch of color that beautiful ingredients like squash, kale leaves, and potatoes can give... a bit of color therapy for the spirit and the palate.

Autumn brings color to the landscape and to the kitchen. Legume soups are always on my table, but I wanted that extra touch of color that beautiful ingredients like squash, kale leaves, and potatoes can give... a bit of color therapy for the spirit and the palate.

In a large pot, add a drizzle of extra virgin olive oil, thinly sliced garlic, chopped kale leaves, and about 1 inch of water.

Once the kale leaves have softened, add the potatoes and squash cut into cubes, along with the cooked beans.

Simmer the soup for at least 1 hour so the flavors blend well.

Serve the soup with a drizzle of fresh extra virgin olive oil for an extra touch of autumn flavor.

Separately, bring some water to a boil and pour it into the pot to cover the ingredients completely. Add salt and, if you like, a teaspoon of turmeric.
