I have used Apples, Pears, Peaches, Apricots, Kiwis, Strawberries, Plums, Pineapple and Oranges for this yummy Fresh Fruit Cake. Preheat your oven to 180°. This is the first and the foremost thing. Now to start with the batter, we need to first cream Butter, Eggs and Sugar with a dash of Vanilla essence.

In a bowl, mix together all of your dry ingredients. Add in all your wet ingredients in another bowl and once mixed well, start by pouring in the liquid into the dry flour mix. Using cut and fold method, try to incorporate the dry ingredients with light hands. Do not over mix it.

Also, keep in mind that we are making a two layered cake. So you will have to make two cakes of the same kind. Or make a single large one according to your convenience. Just as I did.

I would suggest that you mix the batters for two cakes differently, just so that your batter will be well incorporared and you won't have a hard time mixing it. Pour the batter into a well greased butter paper lined baking pan and bake for 30-35 minutes or until the skewer inserted into it comes out clean.

While the cakes are baking, chop up some of your fruits into bite sized pieces to put them in betweem the two layers. Also don't forget to leave some fruits for the topping as well. Next, using an hand held Electric beater, whisk the store bought powdered chocolate flavoured cream until you get stiff peaks.

Finally, let the whipped cream sit in the refrigerator until use. Take your cakes out, remove them from the pans and let them cool completely. After that, take a cake and put a thin layer of whipped cream onto it. Secure a lot of fruits on the whipped cream. This way you can ensure that the fruits can stay put while you cut into it.

Put the other cake on top of this layer. And gently push it down so that it stays intact. As an optional step, let this huge cake rest in the refrigerator for about 5 minutes or so just so that the cream stays stiff.

Take the cake out and you are ready to decorate it. Now for the outer covering, I have used Chocolate flavoured Powder Cream for a change. Cover the entire cake with it. Top with the colourful and bright Fresh Fruits and lots of Tuti Fruiti as an additional attraction. To make it more lovely, I decided to add a handful of tutti frutti. Children love it too, so it is a plus point.
