Ingredients

  • 1 packmeatless "meat" crumbles
  • 1large onion- small dice
  • 1orange pepper-small dice
  • 1red pepper-small dice
  • 1large baking potato-small dice
  • 1large carrot-small dice
  • 1 packetchili seasoning
  • .5 packettaco seasoning
  • 1 TBSgarlic powder or use fresh
  • 2 TBScrushed dried basil
  • 1 TBStable salt
  • 1.5 TBSground black pepper
  • 1 canwhole kernal corn
  • 1 canlow sodium black beans
  • 1 canlight red kidney beans
  • 32 ozrotel tomatoes
  • 8 ozcan petite diced tomatos

Steps

  1. 1

    On med-high heat, in a 6 qt or larger stock pot heat the meatless crumbles until thawed.

  2. 2

    Add all raw veggies- peppers, onions, carrot and potato to pot. Cook until onions are translucent.

  3. 3

    Add all seasonings- garlic powder, basil, salt, pepper, chili and taco seasoning. Mix together.

  4. 4

    Add both beans, tomatoes, and corn. Bring to a boil stirring occasionally.

  5. 5

    Reduce heat and let simmer for at least 30 minutes until potato and carrot are soft.
