Sweet Corn Veg Soup

Take 1/2 cup defrosted sweet corn in a mixer jar and grind to a fine paste adding little bit of water.

In a pan melt butter add finely chopped garlic and saute till aromatic (do not make it brown). Add finely chopped onion or spring onion and saute until translucent.

Add sweet corn paste and saute for a minute. Next add 1/2 cup sweet corn, chopped beans and carrots. Saute well.

Add plain water or vegetable stock if available. Add salt, pepper and let it come to a boil. (You can remove the foam that floats on top)

In a bowl make corn flour slurry by mixing corn flour wit water. Add it to the soup with continues stirring. Once the soup thickens switch off the flame.

Sweet Corn Veg Soup is ready to be served. (Garnish with green spring onion if available)
