A cozy way to warm up that’s a nice change from classic vegetable soup!

Peel and thinly slice the onions.

In a skillet, melt the butter over medium heat. Once melted, add the onions. Sauté gently for 10 minutes.

Dissolve the chicken bouillon in a bowl with water. Add the balsamic vinegar. Pour over the onions to cover them completely.

Simmer on low heat for 30 minutes. Add a little more water if needed to keep some broth in the pan.

Cut 2 slices of bread and toast them. Place them in an oven-safe dish. Top with the onions. Sprinkle with shredded cheese.

Bake in a 350°F oven (180°C) for 10 minutes, until the cheese melts. Five minutes before the end, add the egg yolks and return to the oven.

Season with salt and pepper to taste.
