UWash and roughly chop your vegetables. Place them in a blender and blend

Heat the vegetable oil in a pan over medium heat. Add in the blended vegetables and let simmer until it reduces by half

Transfer the sauce into a baking tin and Make four indentations in the tomato mixture for the eggs. Crack the eggs into the indentations.

Transfer into the oven and bake for 5 - 8 minutes under 170 degrees until the eggs are firm

Serve with bread.
