Since, Cookpad India turns 4, I felt that a fruit cake is the best for the celebration! Here's my simple pineapple cake!!! Hope you like it...

Pre heat the oven for 10 minutes at 170°C. Sift all the dry ingredients 3-4 times. Keep them aside.

In a bowl take all the wet ingredients and heat on high for 1 minute in a microwave.

Mix the dry ingredients to wet ingredients gradually in three parts.

Don't over mix. The mixture should have smooth texture.

Pour both the mixtures in 6" greased cake tin.

Bake the cake in the oven for 50 minutes or till the toothpick inserted comes out clean. Let the cake sponge cool properly.

Whip the whipping cream till stiff peaks are formed.

Cut the cake sponge in 3 parts. Take a cake board apply little whipped cream and place one part on the board. Soak the layer with sugar syrup properly. Now apply a layer of whipped cream. Place small pieces of chopped canned pineapple on it. Similarly do it for the next layer.

Finally cover the cake with whipped cream and decorate as you like it.
