To be honest this was cobbled together with the last few bits of food and leftovers I could find in the fridge and freezer last night. But finding some turkey fillets in the freezer gave me the idea of giving it a festive vibe! If your turkey fillets are small you might want to add them halfway through cooking so they don’t dry out too much.

Ingredients

2 servings

Packpigs in blankets
4thick turkey fillets
2tomatoes
1bell peper
1cold cooked potato (leave this out if you don’t have leftovers to use up)
Olive oil
1/2 tspdried sage
1/2 tspdried basil
Salt and pepper

Cut the veg into large pieces and place in the tray. Add the sausages.

I used my hands to rub oil over the turkey, then put that int he tray too. Sprinkle the herbs over the turkey. Season it all with salt and pepper and add a drizzle of oil over the veg.
