Tuvar,aloo,baigan, papdi aur tamatar ki mixed sabzi

Wash and rinse well all vegetables well and chop it to a medium sized. Crush green chilli, ginger and garlic together and keep aside.

Take a kadhai, add oil,heat well, add mustard seeds,as it splutters add hing,crushed green chilli, ginger and garlic paste,

Then add all vegetables (tuvar,papdi,aloo,baigan).Mix it all well.

Add turmeric powder, red,chilli powder, coriander powder, garammasala powder, salt,sugar.stir and mix well.Cook on medium to high heat for 3 to 4 minutes. Then let it cook on low heat covering it with a lid till all the vegetables are half cooked.

By the time finely chop tomatoes

Add tomatoes once the vegetables are half cooked. Stir and mix tomatoes for 2 to 3 minutes on medium to high heat.

Then let tomatoes get cooked on low heat also add 2 cups of water and cover the kadhai.

Let everything cook well till all vegetables are softened and tender and water is reduced completely.

In between check and stir. Also mash the vegetables with spatula, so that gets the fine consistency of sabzi

Switch off the heat once all vegetables are cooked properly.

Adjust consistency and spices of sabzi.Add according to your taste.

Garnish with fresh coriander
