Candied Orange Peel

I had a bunch of oranges given to me and I honestly had absolutely no clue what to do with them all so from making the orange cake I used the rind of the oranges instead of throwing it out.
It's also perfect to give as a homemade gift.

Steps

In boiling water cook the orange strips for 15 minutes, drain the water and repeat. (This is to remove some of the bitterness from the rind)

In a saucepan (I used a 20cm round saucepan) add the sugar and 300ml of water then over medium heat stir continously until the sugar has dissolved.

Add the peel and bring it to boiling point then reduce it to a simmer and cook for approximately 45 minutes until the orange rind is really soft. If there is any liquid left drain. Mine became gloopy and really sticky so I had to work quickly before it cooled down and hardened.

Line a baking tray with greaseproof paper and add 150g sugar spread out.

Toss the orange rind evenly in the sugar, separating any rinds that are stuck together.

Transfer the coated rind to a tray lined with foil.

Cover the tray with a tea towel and let it dry for 1-2 days. Then place in an airtight container and enjoy.
