When you are fed up with the sight of Turkey, which is usually Boxing Day!! Especially after gorging yourself on the Christmas dinner, Turkey sandwiches on Christmas night and more Turkey again, usually at one o’clock on Boxing Day, it’s time to start thinking about “TURKEY CURRY”
Now when I was a lad I couldn’t wait for my curry, usually presented in the middle of a ring of white rice.

Looking back, I’m almost sure it was my Dad who made this “bang in one saucepan wonder curry” using a couple or three tins of on the shelf curry sauce. No time for messing around with spices and delicately sliced onions in those days, especially as a James Bond film was about to start on telly.

After a couple of tins of marrowfat peas and handfuls of turkey later, usually with the skin attached thrown in for good measure, we were soon sitting down in the living room with our plates on our laps ( The Christmas dinner table now safely back in the kitchen where it belonged after a couple of days starring as leading role decorated with the Christmas tablecloth, paper napkins folded in triangles and Christmas crackers strategically placed in front of everyone’s plate, at the bottom end of our living room ) we could all settle down to watch 007.

Ingredients

30minutes
4-6 servings
  1. 2 tablespoonsvegetable oil
  2. 1medium onion thinly sliced
  3. 1 tspgarlic paste
  4. 1 tspginger paste
  5. 1 tspground turmeric
  6. 1 1/2 tsp ground cumin
  7. 1/2 tspground coriander
  8. 1 tsp paprika
  9. 2 tbspcurry powder
  10. 1/2 tspred chilli flakes
  11. 400 mlgood quality tinned chopped tomatoes
  12. 200mlwater
  13. 1 tbsp plain flour
  14. 1 tbspjuice from 1 lemon
  15. salt and freshly ground black pepper
  16. Cooked Christmas Turkey
  17. Frozen peas

Cooking Instructions

30minutes
  1. 1

    Heat vegetable oil in a frying pan. Add onion, garlic, and ginger, Cook until onions soften. Add cumin, turmeric, coriander, paprika, curry powder, and the red pepper flakes and continue to cook until the spices become aromatic.
    Add the flour and mix well with the spices.

    Stir in the lemon juice and cook out the flour.
    Add tinned tomatoes and stir continuously until the sauce starts to gently boil.
    Lower the heat and cook the curry sauce until it starts to reduce and thicken.
    Adjust seasoning by taste, then add the frozen peas and leftover Christmas Turkey.
    Cook until heated through and serve with some rice.
