Crock-Pot Chicken Curry

Scottish husband (the U.K's healthy Indian influence inspired many of the meals his mom would cook) was craving the comfort of this dish his mom use to make when he was a child. I've never made it before, hadn't ever had curry of any kind. This is what I came up with after reading a Martha Stewart recipe. I improvised with what I already had. Anyway, it was absolutely delicious. He loved it.

Crock-Pot Chicken Curry

Ingredients

8 servings
  1. 3 lbsboneless skinless chicken thighs
  2. 2 cupscoconut milk
  3. 4-8 clovesgarlic (finely chopped)
  4. 2med. onions (thinly sliced)
  5. 3 tbscurry powder
  6. 1-2 tbsground ginger
  7. 1 tbscumin
  8. 1 boxfrozen peas
  9. 1 tbsdried parsley
  10. salt&pepper

Cooking Instructions

  1. 1

    Add everything but the peas in your cockpot

  2. 2

    On high for 6 hours, low for 8-10 hours. Depending on crockpot.

  3. 3

    Add peas the last 5-10 minutes

  4. 4

    Serve over rice & enjoy.

Living up in the mountains, not always having the gas, time, or best weather conditions to get to town for groceries. We run out of things quickly and I have to use what I have. Though I now have a stove and oven, many of my recipes here were from when I didnt. I've had to get quite creative, and find other ways to cook. Like in a toaster oven and an electric skillet. I thought if anyone else has my same issues it'd be great to share my simple minimalist recipes. And find some great ones too.
