Turkey Meatballs in Thai Red Coconut Curry

Another country that my daughter and I love to visit for its food is Thailand 🇹🇭 If you have ever eaten Thai food you know it’s a rewarding experience. Thai food uses numerous kinds of herbs just like Indonesian food. Red Curry is one of our favorite dishes. You can use chicken, duck, pork, beef, or just tofu for this amazingly yummy coconut soup. This time I made some turkey meatballs with a touch of lemongrass and kaffir lime leaves to mix with the soup. Delicious! 😋

Ingredients

  1. Turkey ball ingredients:
  2. 500 grminced turkey meat
  3. 3 clovesgarlic, minced
  4. 2 stalksgreen onions, finely sliced
  5. 1 Tbspfish sauce
  6. 1/2 Tbspred curry paste
  7. 1/2 tspsalt
  8. 1/4 tspground pepper
  9. 1/2 tbsplemongrass paste (you can use fresh lemongrass, take the white part, finely mince it)
  10. 100 grflour
  11. 1egg
  12. Sauce ingredients:
  13. 1 Tbspvegetable oil
  14. 1/2onion, thinly sliced
  15. 1/4red bell pepper, sliced ​​lengthwise
  16. 1/4orange paprika, sliced ​​lengthwise
  17. 4 Tbspred curry paste
  18. 150 mlwater
  19. 3kaffir lime leaves
  20. 250 mlinstant coconut milk
  21. 2 Tbspfish sauce
  22. 1/2 tspmushroom bouillon
  23. coriander leaves to taste for garnish

Cooking Instructions

  1. 1

    Mix all the turkey meatball ingredients. Stir well.

  2. 2

    Shape balls using a medium ice cream spoon. Arrange on a cookie sheet that has been covered with parchment paper.

    Bake in preheated 200C / 400F oven for 25-30 minutes.
    Remove from the oven. Set aside.

    Heat the oil over medium high heat.Saute the onions until fragrant.

  5. 5

    Add the red and orange peppers. Cook until wilted.

  6. 6

    Add water, red curry paste, and coconut milk while stirring continually until it boils.

  7. 7

    Add fish sauce and mushroom bouillon. Stir well. Adjust to taste.

    Add in the turkey balls. Cook again to a boil. Remove from the heat.

  9. 9

    Serve warm with coriander leaves and warm white rice. Yum 😋
