Honey Milk Caramels (with different flavor variations)

I've loved caramels since I was little, but I wanted to make a healthy version.
When making the matcha or Milo (you can used instant coffee instead of the latter) versions, I thought they shouldn't taste too bitter, so I coated them on the outside with a little skim milk powder (not listed in the ingredients). If you dust the caramels like this they won't get stuck to your fingers when you eat them, but they will be delicious without the dusting too. I tried freezing the caramels and they were fine. They'll harden if you freeze them, but when you put them in your mouth they will gradually melt and soften. Recipe by Spain

Put the honey in a heatproof container and microwave for about 1 minute at 500 W. Add the skim milk powder. Roll into shapes with your hands, dust with more skim milk powder (not listed in the ingredients) and they're done. (This is the basic milk caramel version.)

Add some unsweetened cocoa powder to the mixture from Step 1 for chocolate caramels. I also coated them with more cocoa powder on the outside (not listed). This photos shows a mix of milk and chocolate caramels. They're also delicious with matcha tea powder or Milo malt powder (or instant coffee) instead of cocoa.

If using shredded coconut, add 1 tablespoon to each caramel. Dust each one with a little more coconut (not listed in the ingredients).

People have been giving me great feedback with their own cute variations. These hina doll bunnies by user "Airline" are so cute and wonderful - just look at them!

Another Cookpad user called "Kazebiyori" made these chick and egg caramels - these are so pretty to look at too. Not only are these caramels delicious, I had no idea they could be formed into such cute shapes!
