Dry Eggplant Curry for Adults

I quickly fry this up whenever I get a sudden craving to eat dry curry. I always eyeball the ingredient amounts, so I added the amounts afterwards.

If there is too much oil at Step 2, soak up the extra oil with paper towels. 3 tablespoons of curry powder is for those of you that like spicy food. If you are not a fan of spicy food, then 2 tablespoons should be sufficient. Recipe by Haraherisamurai

Ingredients

2 servings
  1. 4eggplants Eggplant (slim Japanese type)
  2. 400 gramsGround pork
  3. 1Onion
  4. 3 tbsp☆Curry powder
  5. 2 tbsp☆Ketchup
  6. 2 tbsp☆Tonkatsu sauce (Japanese Worcestershire-style sauce or steak sauce)
  7. 1 tbsp☆Oyster sauce
  8. 1 tbsp☆Sake
  9. 1 tsp☆Soy sauce
  10. 1Vegetable oil
  11. 1Salt, pepper

Steps

  1. 1

    Cut the eggplant into cubes, and soak in water. After thoroughly draining, pour a generous amount of oil to a pan, cook until golden brown, and remove the eggplants.

    Using the remaining oil in the pan, cook the onions until translucent, add the ground pork and cook until well-done. Add the ingredients marked with ☆ for flavoring, and then add the eggplant and fry.

    Add salt and pepper to taste, and it's done.
