I make this at home to recreate the taste of a dish I had at a restaurant in Chinatown.
I was chosen as a recipe monitor for Takara brand's "Shaoxing Wine for Cooking" and so I uploaded a recipe using this.

In addition to the bamboo and shiitake, try adding green pepper and carrot for colour. Recipe by DUFFYchan

Ingredients

4 servings
  1. 300 gramsGround pork
  2. 100 gramsBamboo shoots (in water)
  3. 4Shiitake mushrooms
  4. 30 gramsCellophane noodles
  5. For the sauce:
  6. 3 tbsp・Water
  7. 1 tsp・Chicken stock granules
  8. 2 tbsp・Soy sauce
  9. 2 tbsp・Tianmianjiang
  10. 1 tbsp・Shaoxing wine
  11. 1 tbsp・Sugar
  12. 1 tsp・Sesame oil
  13. 1/4 tsp・Ginger (grated in tube)
  14. 1 dash・Pepper
  15. 1 tsp・Katakuriko
  16. 1 headLettuce

Steps

  1. 1

    Boil the glass noodles for 5 minutes. Drain in a sieve.

    Mince the bamboo shoots, shiitake mushrooms, and glass noodles.

    Mix the・ingredients for the sauce together.

    Add the meat to a heated pan and brown well.

    Make sure it becomes crumbly.

    Add the minced bamboo shoots and the shiitake. Stir them in and continue cooking.

    Add the sauce and cook quickly.

    Mix in the minced glass noodles.

    Done.

    Shape the lettuce so it forms a bowl to hold the meat.

    Wrap in lettuce!

    Also delicious served with rice.

    If you use miso instead of tianmianjiang, reduce the amount.

    If you like spicy food, add ingredients like doubanjiang.
