I love Bikkuri Donkey.

By adding miso and mayonnaise, you can get that unique Bikkuri Donkey meat mixture. For the onions I didn't heat them, and minced them a little smaller than usual.
Serve with Daikon Radish Salad with "Bikkuri" Mayonnaiseto really create the menu item. Recipe by papikun

1Egg
100 mlPanko
2 tbspMilk
1 tbspMiso

Add all of the ingredients except for the white wine to a bowl, and mix until it takes on a whitish color.

Take the mixture made in Step 1 and shape into thin ovals. Since this is the Bikkuri Donkey style, shape them big and thin.

Put a slightly large amount of oil in a frying pan and heat. Add the meat patties and cook both sides until golden brown. Once browned, stir in the white wine, cover with a lid and steam cook. Once they're cooked through it's done.

Top with 2 shiso leaves and grated daikon like in the picture to recreate one of the menu items, "Oroshiso Burger Dish"
