I had leftover vegetables and ground chicken, so I cooked them and made a filling soup dish.

Ingredients

2 servings
  1. 100 gramsGround chicken
  2. 3 cmGreen onions or Japanese leek
  3. 1thumb Ginger
  4. 1 cloveGarlic
  5. 1 tsp*Soy sauce
  6. 1 tsp*Sesame oil
  7. 1 dash*Pepper
  8. 1/2 smallCarrot
  9. 1/2 bagShimeji mushrooms
  10. 1/2Japanese leek
  11. 600 ml★Water
  12. 1 tbsp★Chicken soup stock granules
  13. 1 1/2 tbsp★Soy sauce
  14. 1 dashSalt and pepper
  15. 1 dashSesame oil
  16. 1 pinchWhite sesame seeds

Steps

  1. 1

    Finely chop the green onion or Japanese leek (3 cm worth). Grate the ginger and garlic.

  2. 2

    Combine the ground chicken, finely chopped green onion or Japanese leek, grated ginger and garlic and the ingredients marked * in a bowl. Mix well with a spoon until sticky.

    Thinly slice the carrot into half moons and diagonally slice the leek. Shred the shimeji mushrooms. Heat the carrot, shimeji mushrooms, and ingredients marked ★ in a pot.

    Bring to a boil, and add the chicken meatballs from Step 2. (or scoop the mixture with a spoon and drop it into the pot). Add the diagonally sliced leek too.

    When the meatballs are cooked, turn down the heat to low. Season with salt and pepper. Turn off the heat. Pour sesame oil and stir.

    Serve into bowls, and sprinkle white sesame seeds.
