Amaranth leaves curry

Slice onions

Wash Amaranth leaves

Take a pan and keep it on the stove, once the pan heats add oil, once the oil heats add mustard and cumin seeds, once it starts crackle add onions and curry leaves,mix it well, add salt and turmeric, mix it, add ginger garlic paste, mix it well, cook it for 2 minutes in low flame by closing the lid.

Once the onion becomes brown add Amaranth leaves, mix it well, once it cooked properly add coriander leaves mix it well.

Take it into a bowl and serve hot with rice /chapathi /roti
