🍍Pineapple Fried Rice (Khao Pad Sapparod)🍍

Today, let's make pineapple fried rice! I made this dish because we had some pineapple left over from a family offering, so it became the perfect ingredient for this delicious and well-balanced fried rice. Give it a try—it's a tasty way to enjoy fruit in your meal!

Today, let's make pineapple fried rice! I made this dish because we had some pineapple left over from a family offering, so it became the perfect ingredient for this delicious and well-balanced fried rice. Give it a try—it's a tasty way to enjoy fruit in your meal!
Steps
- 1
Slice the pineapple in half lengthwise and scoop out the flesh. Dice the pineapple and prepare all other ingredients.
- 2
Heat a skillet over medium heat and add the butter. Sauté the shrimp until just cooked, then remove and set aside. Add the garlic and ham to the pan and stir-fry until fragrant. Crack in the eggs.
- 3
Stir everything together until the eggs are just set.
- 4
Add the diced onion, carrots, and green peas. Stir-fry until the onion turns translucent and everything is well mixed. Add the cooked rice.
- 5
Toss everything together and stir-fry until the rice is dry and fluffy. Add the diced pineapple and mix well.
- 6
Season with soy sauce, salt, black pepper, curry powder, and sugar. Stir-fry everything together and taste; adjust seasoning as needed. Add the raisins and cashew nuts.
- 7
Stir everything together one last time, then turn off the heat. Spoon the fried rice into the hollowed-out pineapple, top with the cooked shrimp, and garnish with scallions and cilantro. Serve and enjoy!
