Greek Yogurt for Desserts

This is an ingredient that has featured in many of my family's desserts for over 15 years now. After draining the yogurt you can save the whey that has collected underneath, which is quite good for you, and use it in a drink or other cooking. Place the yogurt on top of a coffee filter and leave it to strain overnight.

If you have the time, it's best to leave the yogurt draining for over 24 hours as you'll get a creamier consistency. The yogurt in this photo has been draining for 24 hours.
