Ingredients

  1. beef tortillas
  2. 1 2/3 lbground beef
  3. 1/4 cupsofrito
  4. 1 tbspgranulated garlic powder
  5. 1 tbspground cumin
  6. 1 tspsalt
  7. 2 cupshredded cheese , I used colby jack
  8. 1/4 largeonion chopped
  9. 7extra-large flour tortillas
  10. vegetable tortillas
  11. 29 ozcan of refried beans or make homemade
  12. 12 ozblack olives sliced
  13. 3/4 largeonion chopped
  14. 8 ozsliced mushrooms
  15. 1/2 cupsofrito
  16. 1 tbspground cumin
  17. 1 tspsalt
  18. 1/4 cupsunflower oil
  19. 1 tbspgranulated garlic powder
  20. 7extra large tortillas
  21. potato tortillas
  22. 6extra-large flour tortillas
  23. 6 largepotatoes
  24. 1/2 cupsour cream
  25. 1 1/2 tbspground cumin
  26. 1 tbspsalt
  27. 1 cupmilk I used 1%
  28. 1 1/2 cupshredded cheese I used colby jack
  29. 1 tbspgranulated garlic powder
  30. 2 tbspmargarine heaping

Steps

  1. 1

    In a pan brown the meat add onions and spices

    Drain meat

    Add sofrito simmer

    Add cheese on top continue to simmer

    Open the tortilla set on plate in the center add meet fold from all sides

    In a pan fry the pocket folded side down

    Take refried beans open set aside take some sunflower oil heat add onions

    To the onions add olives and then mushrooms

    Fry till tender add refried beans

  10. 10

    Sofritois added when the beans are smooth and heated through add spices

  11. 11

    Let simmer to get most of liquids evaporated

  12. 12

    Add to middle of tortilla fold fry in pan folded side down

    Wash potatoes well cut up add to hot water boil till done

    Drain and mash the potatoes add spices milk margarine stir but keep lumpy

    Stir In sour cream and cheese let it melt into the potatoes

    Spoon some into middle of tortilla and fold put in hot oil folded side down fry turn when golden brown fry the other side same way
