Combine the cold water, sake, rice wine, and soy sauce in a pot and bring to a boil. Add the brown sugar and adjust to taste. Wash and arrange the vegetables and mushrooms on a platter. Cut the tofu into cubes and slice the kabocha squash into rounds.

When the broth is boiling and seasoned to your liking, add the meat, kabocha squash, and mushrooms a little at a time, letting them cook until tender. Add more ingredients as you eat so everything stays hot and fresh. Cook the udon noodles in the broth until soft, then transfer them to bowls with the other ingredients. For dipping, prepare a small bowl of soy sauce mixed with lemon juice to enhance the flavor of the meat and vegetables.
