Brussels Waffles with Fresh Yeast

Brussels Waffles with Fresh Yeast I tried the i Cook Masterclass recipe, with a few tweaks.
🔹I used lactose-free milk instead of regular milk
🔹I added 2 packets of vanilla sugar
🔹I used salted butter, so I didn’t add the pinch of salt.
🔹To my surprise 😲 they turned out crispy and golden on the outside, light and fluffy on the inside.
Delicious! These are perfect as a base for whipped cream, Nutella, jam, or fruit, so they’re not too sweet.

Ingredients

  1. 2 cupsall-purpose flour (about 250 grams)
  2. 3eggs
  3. 1 1/2 tablespoonsgranulated sugar (about 20 grams)
  4. 2 packetsvanilla sugar
  5. 7 tablespoonsbutter or salted butter (about 100 grams; if using salted butter, do not add extra salt)
  6. 1/2 ouncefresh yeast (about 15 grams)
  7. 1 pinchsalt

    Sprinkle 1 teaspoon of sugar over the yeast, pour some of the warm milk over the yeast, stir, and let it rest.

    Melt the butter and set aside.

    In a large bowl or stand mixer bowl, sift the flour, then add the granulated sugar, vanilla sugar, and pinch of salt (skip the salt if using salted butter). Mix the dry ingredients.

    Separate the egg whites from the yolks. Add the yolks to the bowl along with the yeast/milk/sugar mixture. Mix everything together.

    Pour in the melted, cooled butter and mix. Meanwhile, beat the egg whites until stiff peaks form, then gently fold them into the batter in two parts.

    Cover the batter and let it rest for at least 1 hour. Preheat your waffle iron and grease the plates with oil or butter.

    Pour the batter into the waffle iron and cook for about 4 minutes, or until golden brown. Place the waffles on a wire rack to cool. Top as desired or enjoy plain.
