Chicken Fajitas with Vegetables

Wash and sanitize the vegetables, then cut them as directed.

In a bowl, combine the chicken strips, bell pepper, celery, carrot, mushrooms, minced garlic, minced ginger, oregano, mandarin or orange juice, and soy sauce. Let marinate for 30 minutes.

Heat a skillet and add olive oil, minced garlic, minced ginger, and sliced green onions. Sauté for about 3 minutes. Then add the marinated chicken and vegetables, and cook for 8-10 minutes or until the chicken is fully cooked.

Taste and adjust seasoning, adding more soy sauce if needed.

Before serving, sprinkle with sesame seeds (or chia seeds) and the chopped green tops of the green onions.
