This is a must try dish of you rice lover, it's inspired by my mum's cooking,I remember this being my childhood favourite.I have tweaked the recipe a bit but the flavours are amazing.Let me know what you think. #Kickstart

Ingredients

4 servings
  1. 2 cupsLong grain Basmati Rice
  2. 3onions
  3. 2 tablespoonssunflower oil
  4. 1 tablespoonCumin seeds
  5. 1 tablespoonCumin and coriander powder
  6. 2 teaspoonschillie powder
  7. 2 teaspoonsDurban Masala
  8. Halfteaspoon Turmeric
  9. 3bay leaves
  10. 2star anise
  11. 2Cinnamon sticks
  12. 3potatoes, washed,chopped and fried separately
  13. 1 teaspoonsalt
  14. 1 cupfrozen mixed vegetables, fried in butter until soft
  15. 1chicken or 1kg lamb
  16. 2tomatoes grated
  17. Soft boiled Eggs, optional
  18. 1 tablespoonGinger and garlic paste

Cooking Instructions

    Heat oil in a pot, add a heaped tablespoon of butter or Margarine,to this add cumin seeds, Bay leaves

    Allow onions to fry until golden brown

  3. 3

    Add 1 tablespoon Ginger and garlic paste to the fried onions

  4. 4

    Lower the heat

  5. 5

    Add in salt, chillie powder, Turmeric, cumin and coriander powder

  6. 6

    Add in grated or blended tomatoes

  7. 7

    Add chicken or lamb pieces to the pot

  8. 8

    Add half a cup of water and allow meat to soften and gravy to thicken

    Set aside

    Rince the rice in warm water, add about 4 cups boiling water, now throw in the cinnamon sticks, 4 teaspoons salt and star anise, boil rice until half cooked

    Drain the rice using a collender

  12. 12

    Fry mixed vegetables in butter until soft and add it to the rice,mix well

    Fry potatoes and add the chicken and gravy

  14. 14

    In a separate pot,oven safe or a casserole dish layer half rice at the bottom, pour chicken gravy and potatoes over the rice, add boiled eggs, top with remaining rice

    Pour a cup of water over the rice

  16. 16

    Cover and allow to steam in the oven for 30 minutes at 180° Celcius

    Garnish with fresh coriander

  18. 18

    Serve with salads or raita
