Tomato Carrot Soup is a healthy breakfast recipe as well as an appetizer before main course and enjoyed all over the world.Tomato and Carrot alongwith potato, peas and capsicum are full of essential nutrients. Potato lends thickness to the soup and blended with tomato,onion and carrot .Adding sautéed green peas and capsicum and few spices make this soup all the more flavourful. No heavy cream is added . A bowl of fuming hot tomato carrot soup during cold winter mornings is a sure bliss on the breakfast table.Peas and capsicum lend an added crunch to this flavorful soup.Garnish with a blob of butter and chopped coriander.Relish it with toasts, breadsticks or croutons

Assemble all ingredients.Heat 1 tsp clarified butter in a pan and saute for 2 minutes chopped onion, 2 bay leaves, carrot, potato, tomato,ginger garlic paste and salt to taste.Pressure cook upto 4 whistles with 2 cups water till mushy.

Strain the contents in a strainer.Remove bay leaves..Cool and blend the pulp in a blender or mash with a masher.Strain again to get a smooth thick pulp.Set it to boil adding some more water depending on the thickness.Meanwhile heat 1/2 tsp clarified butter and saute capsicum and green peas.Add it to the boiling soup.Add salt and sugar to taste, black pepper powder and garam masala.

For croutons slice into cubes 4 sliced bread.Heat oil and fry till crisp and golden brown. For healthier option brush oil and bake in a pre-heated oven for 5 minutes.Toss and bake till golden and crisp.Serve healthy tangy hot sweet and sour tomato carrot soup with a tsp of butter,chopped coriander and golden fried croutons or toasted bread in breakfast or as an appetizer before main course.
