Prepare all the ingredients.

Peel and shred the daikon radishes. After shredding, you should have about 2 lbs 3 oz (985 grams). Use 1 package (about 1 lb or 450 grams) rice flour and 4 Chinese sausages (about 6 1/2 oz or 185 grams). Divide the water into 1 7/8 cups (450 grams) and 1 2/3 cups (400 grams).

Mix the rice flour with 1 2/3 cups water (400 grams) until smooth to make a batter. Set aside.

Rinse, soak, and finely chop the shiitake mushrooms.

Dice the Chinese sausages into small pieces.

Heat a pan and cook the diced Chinese sausage until the fat is rendered.

Add the chopped shiitake mushrooms to the pan and sauté together with the sausage.

Stir in the fried garlic and fried shallots, mixing well.

Add the shredded daikon radish to the pan and stir-fry with the sausage and mushrooms.

Pour in 1 7/8 cups water (450 grams), add the seasonings, and bring to a boil. Turn off the heat.

Pour the prepared rice flour batter into the pan and stir until the mixture thickens.

Pour the turnip cake mixture into the inner pot of a rice cooker. You can also use two mini rectangular cake pans. This recipe makes enough for two 6-serving rice cooker pots. Smooth the surface with a spatula.

Add 2 cups water to the outer pot of the rice cooker and steam the turnip cake. For mini cake pans, steam for about 30 minutes; for a full 6-serving rice cooker pot, steam for about 50 minutes.

Test doneness by inserting a bamboo skewer into the cake. If it comes out clean and not sticky, it's fully cooked.

Let the turnip cake cool before slicing. Enjoy freshly steamed turnip cake by cutting it into pieces and serving.

For extra flavor, pan-fry the sliced turnip cake until golden and serve with sweet chili sauce.

* This recipe yields a firmer texture than Cantonese-style turnip cake. For a softer cake, increase the water amount.
* For a whiter turnip cake, adjust the ratio of soy sauce and salt.
