Cream of Broccoli Soup

It is packed with good things for our body. Cream of broccoli soup is a delicious soup which is made with very simple ingredients and can be prepared quickly.

It is packed with good things for our body. Cream of broccoli soup is a delicious soup which is made with very simple ingredients and can be prepared quickly.

Chop broccoli into big florets and soak it in salted water for sometime to remove insects. Now wash it with clean water properly.

Heat butter in a pot and add sliced onion to it. Add chopped garlic and saute it until onions are translucent. Now add flour to it and cook for a minute on medium heat. Now add broccoli florets along with vegetable stock or water to it and give it a good mix.

Cook it for 10 to 12 minutes until broccoli is cooked. Now let it become warm at room temperature then grind it in a mixer jar or with a hand blender to make it smooth.

Now put the pot on medium heat and add salt, pepper and warm milk to it. Let it simmer for 5 to 7 minutes on medium heat. Now add fresh cream and lemon juice. Adjust the the seasoning according to your taste. Cook it for couple of minutes and turn off the heat.

Serve cream of broccoli soup hot as a side dish or a starter.
