Hot and sour noodle soup
Steps

Heat sufficient water in a pan. Add noodles and cook. Strain and keep aside.

Heat oil in a non-stick pan. Add ginger garlic and green chilli. Sauté for few seconds.

Add spring onion bulbs. Sauté well.

Now add all vegetables with corn. Add vegetable stock and boil for 5 to 6 minutes.

Now add cornflour slurry and mix and boil. Add noodles to the soup alongwith salt, black pepper and vinegar. Mix well and bring to boil.

Add spring onion greens and serve hot. You can add soya sauce and red chilli sauce to make it dark or more spicy.
