Ingredients

3-4 (12 tacos)
  1. 1onion
  2. 2garlic cloves
  3. 1 canchickpeas
  4. 300 gmushrooms
  5. 300-400 gvegan mince (meatless farm co mince)
  6. 1 cansweetcorn (or frozen equivalent)
  7. Lettuce
  8. Vegan cheese to sprinkle (optional)
  9. Taco kit from supermarket, including:
  10. 1 packettaco spices
  11. 12taco boats
  12. 1 sachetsalsa

Cooking Instructions

  1. 1

    Fry the chopped onion, garlic, mushrooms, mince and drained chickpeas in oil until the onion starts to brown (~8mins) then stir in the spices for another 2mins

  2. 2

    Cook the sweetcorn (microwave or pan) according to instructions, meanwhile line the tacos with strips of lettuce.

    Spoon the taco mixture into each taco, drizzle with salsa and sprinkle with sweetcorn.

  4. 4

    Strore any extra taco mixture in the fridge and microwave when ready to use again.
