Heat the sake and mirin in a pot to boil off the alcohol.

Turn off the heat, then add the soy sauce and brown sugar crystals.

Simmer until reduced by 1/3.

Heat the oven to 200℃, line a baking sheet with kitchen parchment paper, and cook the yakitori for 6 minutes.

Once 6 minutes have passed, pour on some sauce, cook for another 6 minutes, then pour on some more sauce. Cook for 3 minutes to finish!

Transfer to a dish and the yakitori is finished!

If you grill it just before eating, its even more delicious.

Top the rice with some sauce, then top it with the yakitori. Garnish with shredded nori to complete a yakitori rice bowl.
