Risotto is my love and mushroom too. So very often I combine both to make Risotto. Arborio Rice is there and Risotto tastes heavenly.

Risotto is my love and mushroom too. So very often I combine both to make Risotto. Arborio Rice is there and Risotto tastes heavenly.
Steps

Chop the onions. In a wok add 2 Tbsp EVOO (Extra virgin olive oil) and add chopped onions.

Add mushrooms, dried rosemary, dried thyme, Arborio rice. Stir. Add white wine and stir

Add vegetable stock and add salt. Cover and cook on low flame for 15 mins. Add little chopped Parsley leaves, 2 Tbsp grated Parmesan cheese. Set aside

Plate, add 2 Tbsp EVOO, more grated Parmesan cheese, Parsley leaves and enjoy. Enjoy the Mushroom Risotto
