Ingredients

  • Crêpe batter
  • 6eggs
  • 4 cupsflour (about 500 grams)
  • 3 1/8 cupsmilk (about 750 ml)
  • 1 cupbeer (about 250 ml)
  • 3 1/2 tablespoonsmelted butter (about 50 grams)
  • 2 1/2 tablespoonssugar (about 30 grams)
  • 1 pinchsalt
  • Orange Butter
  • 7 tablespoonsbutter (about 100 grams)
  • 6 tablespoonspowdered sugar (about 50 grams)
  • 1organic orange
  • 3 1/2 tablespoonsGrand Marnier (about 50 ml)

Steps

30 minutes
  1. 1

    Prepare the crêpe batter and let it rest for 1 hour before cooking the crêpes.

    Zest the orange, then juice it.

  3. 3

    Soften the butter, add the powdered sugar and orange zest, mix well, and slowly incorporate the orange juice until the mixture has a mayonnaise-like consistency.

  4. 4

    Fill the crêpes with the orange butter and fold them into quarters.

  5. 5

    Sauté the filled crêpes in butter and flambé with Grand Marnier.
