Add salt to water in a bowl, then add the cauliflower florets. Let them soak for 10 minutes, then drain in a colander and let cool.

In another bowl, combine the all-purpose flour, rice flour, and cornstarch. Add a little salt and enough water to make a thick batter.

Heat oil in a pan. Dip the cauliflower florets in the batter and fry until golden. Set aside.

In a pan, heat a little oil. Sauté the chopped ginger, garlic, onion, and green chilies until fragrant. Add the fried cauliflower, then add vinegar, soy sauce, chili sauce, salt, and chili flakes. Mix well. Add the cornstarch slurry and stir until everything is well coated.
