Had leftover Chinese chives from making Pad Thai and didn’t want to waste them. You can use them in many dishes—this is another tasty and appetizing option.

Finely chop the chives into pieces about 1/16 inch (2 mm) long. Add the seasoning powder, sugar, baking soda, and soy sauce. Use your hands to gently squeeze the chives until they soften, then stir-fry them. Heat the oil in a pan, add the chives, and stir-fry until just wilted. Remove and drain on a rack to cool.

Prepare the wrappers. Cut the spring roll wrappers into triangles. Place 1 tablespoon of the cooked chive filling at one corner, fold in the two sides, then roll up tightly and seal the edge with egg white.

Heat oil in a pan over medium heat. Fry the spring rolls until golden brown. Serve with your favorite dipping sauce—chili sauce is a delicious option.
