Ingredients

Serves 3 servings
  1. 1 handfulChinese chives
  2. 1/2 tablespoonseasoning powder (such as chicken bouillon) (about 7 grams)
  3. 1 tablespoonsoy sauce (about 15 ml)
  4. 3/4 tablespoongranulated sugar (about 9 grams)
  5. 1/3 teaspoonbaking soda (about 1 gram)
  6. 1 tablespoonoil (about 15 ml)
  7. Spring roll wrappers
  8. Oil for frying
  9. 1egg white
  10. Chili sauce

    Finely chop the chives into pieces about 1/16 inch (2 mm) long. Add the seasoning powder, sugar, baking soda, and soy sauce. Use your hands to gently squeeze the chives until they soften, then stir-fry them. Heat the oil in a pan, add the chives, and stir-fry until just wilted. Remove and drain on a rack to cool.

    Prepare the wrappers. Cut the spring roll wrappers into triangles. Place 1 tablespoon of the cooked chive filling at one corner, fold in the two sides, then roll up tightly and seal the edge with egg white.

    Heat oil in a pan over medium heat. Fry the spring rolls until golden brown. Serve with your favorite dipping sauce—chili sauce is a delicious option.
