Ingredients

30 minutes
Serves 10 servings
  • 8 1/2 cupswhole milk (2 liters)
  • 2 cupscoarse semolina
  • 1 cupsugar
  • 1 teaspoonground mastic
  • 1/2 cupshredded coconut
  • 1/4 cuprose water and orange blossom water
  • 1 poundclotted cream (for garnish)

Steps

30 minutes
  1. 1

    Heat the milk in a pot over medium heat.

    Meanwhile, mix the dry ingredients together in a bowl.

    When the milk comes to a boil, add the dry ingredients to the pot and stir constantly until the mixture thickens.

    Before removing from the heat, add the rose water and orange blossom water. Stir for 2 minutes, then remove from heat.

  5. 5

    Pour the mixture into a mold or dish and let it cool. Once cooled, refrigerate.

    Before serving, garnish with clotted cream and shredded coconut.
