  1. 2 cupsmasa harina (about 250 grams)
  2. Salt, to taste
  3. as neededWater,
  4. 9 ozchorizo (about 250 grams)
  5. 4potatoes
  6. 1/4 headromaine lettuce
  7. as neededSour cream,
  8. 1Roma tomato
  9. as neededRefried black beans,
  10. as neededVegetable oil,
  11. 2tomatoes
  12. 1/4onion
  13. 2 clovesgarlic
  14. 3serrano peppers

    For the spicy salsa, roast the Roma tomato, tomatoes, onion, garlic cloves, and serrano peppers. Blend them in a blender and add salt to taste. Set aside.

    Boil the potatoes with a little salt.

    In a mixing bowl, add the masa harina, a pinch of salt, and gradually add water until you get a smooth, uniform dough.

    Take a ball of dough about 2 inches (5 cm) in diameter and flatten it to about 1/4 inch (0.5 cm) thick. Cook on a preheated, lightly oiled skillet or griddle over medium-low heat.

    Flip the sope, and before it is fully cooked, remove it onto a cloth napkin. Pinch the edges using the napkin to avoid burning your fingers. Return it to the heat to finish cooking.

    Remove the cooked potatoes and, in the remaining hot water, soak the chorizo briefly to remove the casing.

    Add the chorizo to a hot skillet and cook until browned. Add the potatoes, cut into small cubes. Season with salt and mash the potatoes slightly so they mix well with the chorizo.

    To assemble, spread a layer of refried black beans on each sope, then add the chorizo and potato mixture, shredded lettuce, sour cream, and salsa.
