Low-Cal Drinking Appetizer: Mentaiko and Shirataki Noodles

My husband is currently on a low-carb diet, at least for dinner! He mutters "I want to east pasta..." every day, so I made this pasta-like dish using things I had in my sparsely stocked refrigerator, and it loved it. So I made it into a recipe.

Be sure to stir fry the shirataki noodles to eliminate the odor. Getting rid of the moisture will also make the butter cling to the noodles better.
The mentaiko will splatter quite a bit, so be careful not to burn yourself!
Adjust the amount of mentaiko to taste.
The shiso and green onions are the garnish, so you can omit them if you like. Recipe by Su-ji-&jiru

Ingredients

1 serving
  1. 150 gramsShirataki noodles
  2. 30 gramsMentaiko
  3. 10 gramsButter
  4. 1 dashSeasoned salt, pepper
  5. 1 dashShiso leaves, green onions

Steps

  1. 1

    Drain the shirataki noodles and cut them into easy to eat lengths. Stir fry the noodles in a non-stick frying pan until the moisture and odor are gone.

  2. 2

    When the moisture is gone, add butter and mix.

  3. 3

    When the butter has coated the noodles, turn the heat down low, add the mentaiko and mix.

  4. 4

    Season with salt and pepper. Done!

  5. 5

    Transfer to a plate and add shiso leaves or green onion etc. as garnish (optional).
