Creamy Mushroom and Spinach Toast

I absolutely love mushrooms, and mushrooms and cheese happens to be a favourite combination of mine. With mushrooms available aplenty, this toast has become a common breakfast at my place.

Prepared with mushrooms and cream and cheese, this mushroom sauce can be had with toast, can be used as a pasta sauce, can be a side dish, or can be enjoyed by itself.

You can add shitake mushrooms, too, and can even add veggies if you like. Though I prefer to keep it simple.

Ingredients

40 mins
2 servings
  • 200 gramsbutton mushrooms
  • 3 podsgarlic
  • 1 tbspolive oil
  • 2 tbspbutter
  • Salt to taste
  • Black pepper powder
  • 1/2 cupcream
  • 1/2 cupmilk
  • 3-4 tbspparmesan cheese
  • 1 cubeprocessed cheese
  • 1/2 cupspinach
  • 3-4 slicesbread (toasted)

Steps

  1. 1

    In a pan, combine butter and olive oil together on low heat. Add roughly chopped garlic and cook on low heat for 2-3 mins.

    Add slices of button mushrooms to the pan.

    Add salt and pepper to the mushrooms and mix. (This will make the moisture release from the mushrooms).

    Cook for 5-6 mins on low heat.

    Add full fat cream and milk to the mushrooms.

    Put parmesan cheese and processed cheese and mix.

    Cook for 5 mins till the mixture thickens.

    Add chopped fresh spinach, or baby spinach leaves to the mushrooms and cream sauce.

    Cook for 1-2 mins. Your cheesy and creamy mushroom and spinach sauce is ready

    Place the mushrooms over toasted bread, garnish with fresh spinach and serve.

    NOTE:
    If you don't have cream, cook 1 tbsp of regular flour in 1 tbsp olive oil and then put 1/2 cup milk to it. Cook this mixture till it thickens and use this in place of cream.
